The At-Terroir Glossary contains vocabulary frequently used to talk about features on our site and aspects of our service.

Protected Designation of Origin - PDO

Covers agricultural products and foodstuffs which are produced, processed and prepared in a given geographical area using recognised know-how and whose quality is due to the particular geographical environmental.

Protected Geographical Indication - PGI

Covers agricultural products and foodstuffs whose quality or reputation is attributable to its geographical origin. At least one of the stages of production, processing or preparation takes place in the geographical area.

Traditional Speciality Guaranteed - TSG
Highlights traditional pratices, either in the composition or methods of production and recipes of agricultural products and foodstuffs, including prepared meals.

Agricultural product "Qualities"

Includes both 'product characteristics' (physical, chemical, microbiological and organoleptic features – size, appearance, taste, smell, shape, look, ingredients, etc.) and 'farming and production attributes' (production method, type of animal husbandry, use of processing techniques, place of farming and of production, etc.).
